This is a great Instant Pot vegetarian lasagna. You can use any vegetables you like, but I like vegetables that melt into the dish a bit, so I use zucchini, summer squash, sliced tomatoes, and spinach. This recipe makes two lasagna pans, which I cook separately in my Instant Pot, using the Pot In Pot method….
