Pulled Pork Tacos

July 26, 2015 By WooPigFoodie Leave a Comment

Tacos are a great family dish. It takes almost no time to get all the parts ready, and then everyone can build just what they like. The kids really clean their plates come taco night.

We make all types of crunchy and soft tacos, with beef, chicken, and even vegetarian ones made from black beans, Rotel and Penzey’s Arizona Dreaming, but I think my very favorite way is to make pulled pork tacos from The Ultimate Pulled Pork. That balance of juiciness, smokiness, and added heat from fresh jalapeños or hot sauce really sings.

Soft Tacos

Tonight, we made them with The Ultimate Pulled Pork, soft and crunchy taco shells, fresh corn, shredded cheese, salsa, lettuce, sour cream, olives, local Arkansas tomatoes, a drizzle of hot sauce and a quick splash of lime juice. Fantastic!

The Thing About Fried Pickles

The thing about fried pickles is that you know they’re going to be hot. And you know that little cup of ranch dressing isn’t going to do it. You’re going to burn your mouth, your hands, and have hot vinegary dill pickle juice streaming down your chin and dripping onto the table. That’s just the way it is. And you don’t care. So you dive in, and burn yourself good. And it’s fantastic.
