Memphis in May 2022 Pork Shoulder Champion Sweet Swine ‘O Mine

I had the great pleasure of seeing my friend Mark Lambert and his team Sweet Swine ‘O Mine win #1 pork shoulder at the 2022 Memphis In May World Championship Barbecue Cooking Contest. Here are a bunch of pictures of their final judging and the sweet aftermath.

They’ve just heard they made it to finals, and are rushing around to get their cook site and pork shoulder ready for the four-judge finals visit.

Here come the judges!!!

The judges are greeted at the door, and welcomed into the cook site.

Mark Lambert greets the judges too.

First they start by viewing the smoker and learning about the cooking process. Mark walks the judges through the wood, the rub, the sauce, and the time to get his winning pork shoulder ready.

The Sweet Swine ‘O Mine team dresses up a shoulder in the smoker with all sorts of fancy carved vegetables to make it look really pretty.

My favorite one was the carved pig!

Now it’s time to sit the judges down and eat. Mark takes the judges up and down the shoulder so they can try each different part.

Here’s what the judges were eating.

Mark’s having a good time with this. And so are the judges.

Mark knows. He can feel it.

After the judges left they tore it up so we could all try.

It was so juicy and smoky and delicious. It was a real treat to try this year’s World Championship pork shoulder!
