Sweet Swine O’Mine Shows a Serious Hog at Pigapalooza 2022 at the American Royal

Mark Lambert’s Sweet Swine O’ Mine has been a longstanding, serious contender in whole hog. I’ve seen them compete in pork shoulder at Memphis in May and I’ve spent many a weekend at Mark’s place eating his great cooking and enjoying his hospitality while judging SCA steak cookoff competitions. At Pigapalooza 2022 at the American Royal, Mark was raising money for Operation BBQ Relief.

Here’s Mark. He’s on the left with his hand on his Recteq Bull.

He’s a really good teacher, and likes to walk his judges up and down the hog, pulling and tasting the ham, shoulder, tenderloin and bacon.

Here’s the tenderloin.

And the bacon! The bacon comes out really soft and loose when cooked in a whole hog. It’s slippery and soft and just slides on down.

The meat was really juicy, smoky and beautiful.
